Fourth stage of digestion in the jejunum dominated by Air and Fire, where pungent enzymes continue digestion and initial absorption of chyle begins.
Pungent Stage in the Jejunum
The pungent stage takes place in the jejunum, the second portion of the small intestine. Air and Fire are predominant, and the enzymes in the upper jejunum are pungent with hot, sharp, and subtle qualities. The Fire component makes the food yellowish-brown and drives continued digestion, while increasing heat and circulation throughout the body. If pitta is already high, this stage can irritate hemorrhoids, skin rashes, and bleeding disorders.
The Air element makes the bones porous and is necessary for nutrient absorption; it also produces intestinal gases and peristalsis through samana vayu. Although most absorption occurs in the ileum and colon, initial absorption of chyle begins here. Pungent taste is yielded into rasa dhatu and nourishes asthayi asthi dhatu.

Katu avastha paka is the pungent stage of digestion, taking place in the jejunum about four hours after eating. At this stage the food is dried and broken down further, building heat and pitta.
