The Four Types of Food

Ayurveda classifies food into four types based on how it is consumed. Ashita refers to soup or jelly-like substances that need no mastication and can simply be swallowed. Khadita is solid food that must be chewed to make soft. Peyam means drinks such as water, fruit juice, or very thin gruel. Lehya refers to food that is licked, such as ice cream or pickles.

The moment any food or substance contacts saliva (bodhaka kapha), the first experience is taste. Prana vayu assists mastication by directing the muscles of the tongue, and the food bolus becomes soft, warm, oily, and easy to swallow.
